Cooking Contest

We would like to get more people involved in what would have been a big part of the life in the early 1800’s

Rules: Entry must be prepared at Rendezvous.

Entry must ONLY use ingredients listed here.

All utensil must be period.

Must be accompanied with a recipe written on period paper.

Must have cook’s name on it.

We are open to anyone who wants to participate and please consider joining us for the fun.

The Category is open to anything: Main Dish, Vegetables, Desserts, Breads, anything you like.

Everything must be period, see list of ingredients available in the 1840’s.

**Sugar was scarce and was made at home by using maple sugar, honey, sorghum,

or boiling down melon juice**

***NOTE: Processed foods are not allowed (i.e., creamed soups, ketchup, tomato sauce, tomato sauce, tomato soup, etc.

Random Thoughts: Let your imagination run wild. Remember “If they had it, they used it” not much went to waste. Search through any old or new cookbooks or magazines or use an old family recipe. Try substitutes for ingredients in the recipes if what they call for was not available time in our period. Remember people worked very hard physically and were not real concerned about fats in their diets.

For example-if a recipe calls for mushroom soup try cream, slices mushrooms, and a little salt.

*Instead of “up-date” we need to “down-date”!

*Butter can be used used liberally,

*Bacon as a seasoning was very common.

Ideas: Main Dish- Stews, meat pies, roasts, meat w/gravy, fish, game, or any form of pork

Vegetables- How about a vegetable chowder? Or zucchini bread pudding?

Remember broccoli & cauliflower are OK.

Got any good ideas for cucumbers? Can you do something with a potato or sweet potato?

How about lima beans or peas?

Desserts- Let’s go WILD! Look for all fruits and berries you could make a pie or cobbler!

How about an upside down cake?

Or a custard pie? Or get a really old, how about a vinegar pie?

Don’t forget to check out the available nuts.

How about a cake or bread pudding with fruit or liquor sauce.

Breads- Lots here too! Yeast doughs or biscuit type, sourdough, muffins, pancakes, etc.

Remember to garnish with butter or bring butter, a sauce, or real maple syrup to serve with it!
